What foods cannot be freeze-dried?

Anything that is mostly fat or mostly sugar will not freeze dry well. Fat will not dry - but it will heat up in the equipment and melt and cover every surface. When I tried pre-cooked pork sausage patties, they made a mess.

The sugar combines with the water and traps it in the food. This is very useful for inhibiting bacterial growth, but it means you can't freeze-dry jams and jellies, which are mostly sugar. Regular fruit and most desserts are fine.

Can you mix foods in the freeze dryer?

How do I know if food has been freeze dried?
